Carrot And Green Bean Scallop - cooking recipe
Ingredients

2 c. cooked green beans
2 c. cooked carrots
3 Tbsp. butter
2 Tbsp. flour
1 Tbsp. minced onion
1 tsp. salt
1/8 tsp. pepper
1 1/2 c. milk
1 c. liquid in which vegetables were cooked
2 beaten eggs
1/2 c. grated cheese
buttered crumbs
Preparation

Melt butter.
Cook onion in it slightly.
Add flour and seasonings, blending well.
Gradually add milk and vegetable juice, stirring while cooking.
When slightly thickened, add beaten eggs; cook 1/2 minute, stirring constantly.
Do not let sauce boil after adding eggs.
Add cheese, then vegetables.
Pour into a greased baking dish.
Top with buttered crumbs.
Bake at 350\u00b0 for 1/2 hour.
