Gator Chorizo(Sausage) - cooking recipe
Ingredients

1 lb. ground gator
1 lb. ground pork, unseasoned
3 cloves garlic, crushed with 1 tsp. salt
1/2 tsp. oregano, finely crushed
1 to 3 tsp. chili powder (hot)
1 tsp. ground coriander
1 tsp. ground cumin
1 1/2 tsp. powdered cayenne
1 tsp. pepper
1 tsp. salt
1/2 c. vinegar
1/2 c. sherry (can substitute another 1/2 c. vinegar)
Preparation

Mix and work all ingredients together, except meats.
Then mix in meats and work it with your hands to mix thoroughly.
The vinegar and sherry \"cures\" the meat and prevents spoilage.
Cover and refrigerate.
Let season for at least 3 days before using.
