Spinach Lasagna - cooking recipe

Ingredients
    8 oz. lasagna noodles
    2 eggs, beaten
    1 1/2 lb. Ricotta cheese
    10 oz. pkg. frozen, chopped spinach, cooked and drained
    1/2 tsp. salt
    12 oz. Monterey Jack cheese, shredded
    1 lemon rind, grated
    1 Tbsp. lemon juice
Preparation
    Cook lasagna in boiling, salted water according to package directions.
    Drain.
    In a large bowl, combine eggs, Ricotta, spinach, salt, lemon rind and lemon juice.
    (Optional: Pinch of cinnamon.)
    Mix well.
