Menudo(Mexican Tripe Stew) - cooking recipe

Ingredients
    1 lb. beef tripe
    4 cans chicken broth
    2 cans hominy
    3 carrots, diced
    1 pkg. menudo seasoning mix (available at Brookshire's or Kroger)
    4 c. water
    1 large diced onion
    3 cloves garlic (optional)
    salt to taste
    black pepper to taste
    chopped jalapenos (optional)
Preparation
    Cut beef tripe into small pieces.
    Simmer, without any liquid, for 1/2 hour.
    Watch that it doesn't burn.
    Add water and simmer for 2 hours.
    Add more water, if needed.
    Add chicken broth, hominy and rest of the ingredients.
    Simmer for 1 1/2 hours more. May be served with jalapenos and/or a slice of lime.
