Vegetable Stir-Fry - cooking recipe

Ingredients
    2 Tbsp. margarine
    1 c. celery, chopped
    1 c. diced carrots
    1/4 c. chopped green onion
    1/4 tsp. dried oregano leaves, crushed
    2 c. cooked rice
    1/2 c. water
    1/2 lb. Velveeta cheese, cut in 1/2-inch cubes
Preparation
    Chop vegetables into uniform sizes.
    Then heat margarine in skillet over medium-high heat until bubbly.
    Add vegetables and oregano to skillet.
    Stir-fry 4 to 5 minutes.
    Add 1/2 cup water. Cook 5 minutes longer.
    Stir in rice.
    Heat thoroughly, stirring occasionally.
    Stir in cheese.
    Serve hot.
