Sweet Potatoes With Poached Cranberries - cooking recipe
Ingredients

1 c. cranberries (one 10 to 12 oz. pkg. fresh)
1 c. sugar
1 c. water
1 cinnamon stick
2 large sweet potatoes (2 lb.)
1 Tbsp. cider vinegar
salt to taste
Preparation

Combine sugar, water and cinnamon.
Stick in a deep saucepan. Bring the mixture to a boil.
Cook for 3 minutes.
Add cranberries and cook, uncovered, at a low boil, stirring often for about 5 minutes or until the berries have popped open but still retain their shape.
Remove the cinnamon stick and set the poached berries aside to cool slightly.
