Fritto Misto(Mixed Fish Fry) - cooking recipe

Ingredients
    any combination of fish (such as: fillets, shrimp, scallops and calamari)
    olive oil (don't skimp)
    1 beaten egg
    few drops of water
    salt and pepper
    flour
    bread crumbs
    lemon for garnish
Preparation
    Wash all the fish and dry on paper towels.
    Heat a frying pan. When hot, add oil.
    Dip each piece of fish into egg mixture (beat egg with few drops of water and salt and pepper).
    Then dip into flour mixture (flour and bread crumbs) and drop into hot oil.
    Fry one type of fish at a time if you have a lot.
    When fish pieces are golden brown on both sides, lift with spatula and drain on paper towels.
    When all the fish is fried and drained, sprinkle with salt and pepper.
    Arrange on a heated serving platter and garnish with lemon wedges.
    Serve with green salad, tossed with olive oil and lemon dressing.
