Cheese Souffle - cooking recipe

Ingredients
    4 Tbsp. butter
    4 Tbsp. flour
    1 c. milk
    1/4 tsp. mustard
    dash of cayenne pepper
    dash of salt
    dash of pepper
    1 c. shredded sharp Cheddar cheese
    3 eggs
    1/4 tsp. cream of tartar
Preparation
    Make a thick white sauce with the butter, flour and milk.
    Add mustard, cayenne pepper, salt and pepper. Stir into the hot white sauce the shredded cheese.
    Remove from heat; stir in egg yolks, well beaten.
    Beat until stiff 3 egg whites with cream of tartar. Fold in the cheese mixture.
    Pour into a greased 1 1/2-quart casserole (7 1/2-inch).
    Make a groove 1 inch from the edge with a knife blade.
    Set casserole in a pan of water 1 inch deep. Bake until puffed and golden brown, in a moderate oven (350\u00b0) about 50 to 60 minutes.
