Ingredients

2 c. buttermilk
2 eggs, beaten
1/4 c. Mazola oil
2 c. flour
3/4 tsp. baking powder
3/4 tsp. baking soda
dash of salt
1 1/2 Tbsp. sugar
Preparation

Beat eggs.
Add buttermilk and oil.
Mix dry ingredients and add to first mixture.
Mix, but do not overmix (a few small lumps are okay).
Let stand 15 minutes.
Set baker to a little hotter than medium setting.
Spray baker with Pam first time.
Pour about 1/3 cup batter in center of baker.
Bake until brown. Makes 7 to 8 waffles.
