Sweet Potato Balls - cooking recipe
Ingredients

3 c. cooked sweet potatoes
1/4 c. butter
3/4 c. brown sugar
2 tsp. milk
1/4 Tbsp. salt
1/2 tsp. grated lemon rind
8 marshmallows
1/2 c. crushed corn flakes or coconut
Preparation

Mash the sweet potatoes.
Add butter, sugar, milk, salt and lemon rind. Scoop up 1/4 cup of mixture.
Put a marshmallow in the center.
Cover with more potatoes and shape into balls. Roll in crushed corn flakes or coconut.
Place in buttered baking dish and cover with aluminum foil.
Freeze. When ready to serve, bake until marshmallows begin to ooze, about 20 minutes. Serves 8.
