Italian Fritters - cooking recipe

Ingredients
    4 eggs, beaten
    1/2 c. sugar
    1 lb. Ricotta cheese
    1 c. flour
    1 tsp. vanilla
    2 tsp. baking powder
    1/2 tsp. salt
    powdered sugar
Preparation
    Combine ingredients and set aside for 1 hour.
    Drop by the tablespoon into hot oil (2-inches).
    Do not crowd pan.
    Remove when done.
    Dust with powdered sugar.
