Mem'S Pea Soup - cooking recipe

Ingredients
    1 ham bone
    1 lb. peas (whole or split)
    1/2 tsp. salt
    1/2 tsp. pepper
    1/2 onion, diced
    1 tsp. parsley flakes
    1/4 c. rice
    1 small carrot, diced
    1 can hominy (white corn)
Preparation
    Soak peas overnight in cold water.
    Next morning, drain and put peas in a large pan.
    Add ham bone, diced onion and carrot.
    Cover ingredients with water and add salt, pepper and hominy (drain and rinse hominy before adding to soup).
    Bring to a boil and reduce heat to simmer until peas and carrot are cooked.
    While soup is cooking, be sure that your ingredients are just covered with water. Usually takes about 1 1/2 hours.
    About 15 minutes before soup is done, add the rice.
