Fried Eggplant - cooking recipe
Ingredients

1 large eggplant
1/3 c. flour
1 egg
1 Tbsp. water
1/3 c. fine bread crumbs
3 Tbsp. margarine
salt and pepper to taste
Preparation

Peel eggplant and cut into sticks about 3/8-inch thick so they resemble French fries. Sprinkle with salt and pepper. Roll in flour, then dip in beaten egg and water. Roll in bread crumbs and fry in skillet in hot margarine until golden brown, about 8 minutes. Drain on paper towel and serve hot.
