Shrimp Pasta Salad - cooking recipe
Ingredients

1 1/2 lb. cleaned and cooked shrimp
1/2 lb. snow peas, blanched
2 c. diced Roma tomatoes
4 Tbsp. chopped parsley
2 tsp. finely grated orange zest
1/4 c. olive oil
1/2 lb. fusilli, cooked
1/4 c. orange juice
salt and pepper to taste
Preparation

In a large bowl, combine shrimp, snow peas, tomatoes, parsley, orange zest, oil, pasta, salt and pepper.
Toss together well. Before serving, add orange juice and toss.
Serves 6.
