Cinnamon-Apple Salads - cooking recipe
Ingredients

1/2 c. red cinnamon candies
2 c. water
6 small tart apples, peeled and cored
13 oz. pkg. cream cheese, softened
2 Tbsp. milk
1 tsp. lemon juice
1 (8 1/4 oz.) can crushed pineapple, drained
1/3 c. snipped pitted dates
2 Tbsp. chopped walnuts

Preparation

In a 3-quart saucepan, cook and stir cinnamon candies in water until dissolved.
Add apples and cook slowly uncovered for 15 to 20 minutes or until tender, turning once during cooking.
Chill apples in syrup several hours, turning once.
Blend cream cheese, milk and lemon juice until smooth; stir in pineapple, dates and walnuts.
Drain apples.
Stuff center of each apple with some cream cheese mixture.
Serve on lettuce-lined plates.
Makes 6 servings.
