Garden Chicken Salad - cooking recipe

Ingredients
    Sour Cream Dressing
    1 1/2 c. boiling water
    1 1/2 c. dry Minute rice
    1 small onion, diced
    1 1/2 cubed cooked chicken
    1 (16 oz.) pkg. Birds Eye broccoli cuts, thawed
    1/2 c. sliced celery
    8 cherry tomatoes, halved
Preparation
    Pour boiling water over rice and onion in 2-quart bowl.
    Cover with foil and let stand 5 minutes.
    Stir in dressing and remaining ingredients and mix lightly.
    Serve on lettuce if desired.
    Makes 4 servings.
