Rice And Shrimp Casserole - cooking recipe

Ingredients
    1 c. celery, diced and sauteed until tender
    2 Tbsp. margarine
    3 c. rice (hot cooked)
    2 c. shrimp (can also use crab, tuna, chicken or combo)
    3 hard-boiled eggs, chopped
    3 Tbsp. lemon juice
    1/2 c. mayonnaise
    1/2 can cream of celery soup (1 c.)
    1 (3 oz.) can French fried onion rings (can substitute sauteed bread crumbs in margarine until brown)
Preparation
    Mix rice, celery, meat, eggs and lemon juice. Fold in mayonnaise and soup.
    Place in greased casserole dish. Top with onion rings or bread crumbs or add last 10 minutes as they tend to get too brown on top. Bake at 350\u00b0 for 25 or 30 minutes until bubbling hot. Serves 6.
