Vegetable Soup - cooking recipe

Ingredients
    2 Tbsp. butter
    1 yellow onion, finely chopped
    2 carrots, diced
    2 stalks celery, diced
    4 c. chicken broth
    1 c. cauliflower flowerets
    1/2 c. green peas
    1/2 c. green beans
    2 tomatoes, seeded and cut into small pieces
    salt and pepper to taste
    2 Tbsp. parsley, finely chopped
Preparation
    Saute onion, carrots and celery in butter for 3 minutes, until softened.
    Add hot chicken broth and cauliflower.
    Simmer 15 minutes and add peas, beans and tomatoes.
    Continue cooking for 10 minutes.
    Taste the soup and add salt and pepper if necessary. Garnish soup with chopped parsley.
