Eggplant Au Gratin - cooking recipe

Ingredients
    1 large eggplant
    1 egg
    1 medium onion, chopped
    bread crumbs
    1/4 lb. sharp or mild cheese, grated
Preparation
    Peel and boil eggplant in salted water until soft.
    Strain off water and mash.
    Saute onion in margarine or butter.
    Beat egg. Combine eggplant, onion, egg and cheese and place in greased casserole.
    Cover with bread crumbs and dot with butter.
    Bake in moderate oven for 30 minutes.
    Serves 4.
