Honey-Vanilla Oat Bran Muffins - cooking recipe
Ingredients

2 1/4 c. oat bran
2 tsp. baking powder
1 tsp. each: baking soda and cinnamon
1/2 tsp. nutmeg
1/4 c. each: raisins and chopped nuts
8 oz. container low-fat vanilla yogurt
6 Tbsp. honey
2 egg whites
2 Tbsp. vegetable oil
1 tsp. vanilla
Preparation

Preheat oven to 425\u00b0.
Combine dry ingredients in large mixing bowl.
Stir in raisins and nuts.
Combine liquid ingredients in a small bowl.
Mix well.
Stir liquid ingredients into dry ingredients just until moistened.
Fill 12 paper lined muffin cups to 3/4 full.
Bake 15 to 18 minutes.
