Bran Muffins - cooking recipe
Ingredients

1 1/2 c. flour
3 tsp. baking powder
1/2 tsp. salt
1/2 c. sugar
2 1/2 c. bran
1 1/4 c. milk
1 egg
1/3 c. soft shortening or vegetable oil
Preparation

Stir together flour, baking powder, salt and sugar. Set aside. Measure 2 1/2 cups bran into mixing bowl; add milk and let set until cereal is softened. Add egg and shortening. Beat well. Add dry ingredients to cereal mixture, stirring only until combined. Portion batter evenly into 12 greased 2 1/2-inch muffin pan cups. Bake in oven at 400\u00b0 about 25 minutes or until muffins are golden brown. Serve warm.
Makes 1 dozen.
