Scallops Florentine - cooking recipe

Ingredients
    1 1/4 lb. scallops
    1/4 c. butter or oleo
    1 1/4 c. milk
    1/2 c. dry white wine
    1/4 c. chopped green onion
    1 Tbsp. cornstarch
    2 (10 oz.) pkg. frozen chopped spinach, thawed and well drained
    1/2 to 1 c. shredded Mozzarella cheese
Preparation
    Combine scallops, butter, milk, wine and onion in a saucepan; cook over low heat 10 minutes.
    Combine cornstarch and a small amount of hot liquid.
    Mix until smooth and stir into hot mixture. Cook until slightly thickened, stirring constantly.
    Do not boil. Spoon spinach into a 1 1/2-quart casserole.
    Pour scallop mixture over spinach.
    Sprinkle with cheese.
    Bake at 350\u00b0 for about 10 minutes or until bubbly.
    Serves 4.
