Skillet Okra And Rice - cooking recipe
Ingredients

1 tsp. vegetable oil
1/4 c. chopped onion
1/4 c. chopped green bell pepper
1 clove garlic, chopped
1 c. chopped tomato
2/3 c. chicken broth
1/2 tsp. thyme leaves
1/4 tsp. pepper
1/8 tsp. red pepper sauce
1 small bay leaf
1/3 c. uncooked regular long-grain rice
8 oz. okra, cut into 1/2-inch slices
Preparation

Heat oil in 10-inch nonstick skillet.
Over medium-high heat, cook rice in oil about 3 minutes, stirring frequently, until golden brown.
Stir in onion, bell pepper and garlic.
Cook 5 minutes, stirring frequently, until onion begins to soften.
Stir in remaining ingredients except okra.
Heat to boiling.
Reduce heat, cover and simmer until rice is tender.
Stir in okra.
Cover and simmer 10 minutes longer or until okra is tender.
Remove bay leaf.
