Tarragon Surprise - cooking recipe

Ingredients
    1 lb. boneless chicken breasts
    8 oz. cream cheese, softened
    1/2 c. Parmesan cheese, grated
    2 Tbsp. butter
    1 c. sliced mushrooms
    1/2 tsp. tarragon
    pinch of cayenne pepper
    2 Tbsp. Dijon mustard
    2 c. plain yogurt
Preparation
    Saut mushrooms in butter. Slice in thin strips the chicken and brown with mushrooms and butter. Add yogurt and cream cheese. Turn heat to simmer and add spices. Simmer 20 minutes, then add Parmesan cheese. Serve over brown rice.
