Green Tomatoes Parmesan - cooking recipe

3 green tomatoes, sliced 1/4 in. thick
salt
1/4 c. cornmeal
1/4 c. grated parmesan cheese
2 Tbsp. all purpose flour
3/4 tsp. garlic salt
1/2 tsp. oregano
1/8 tsp. pepper
1 egg, beaten
1/4 c. vegetable oil
Preparation

Lightly sprinkle tomatoes with salt and drain on paper towels for 1 hour. Meanwhile, combine cornmeal, parmesan, flour and seasonings in a shallow plate. Dip each tomato slice in egg, then into cornmeal mixture. Fry tomatoes a few at a time in hot oil for 2 minutes per side or until golden. Drain on a paper towel lined rack. Serve hot. Four to six servings.
