Apple-Cinnamon Muffins - cooking recipe
Ingredients

1 c. flour
1 c. oat bran
1/4 c. sugar
2 1/2 tsp. baking powder
1/2 tsp. salt (optional)
1/2 tsp. cinnamon
1 egg, beaten
1 c. milk
2 Tbsp. oil
1 c. peeled, chopped apple
Preparation

Stir together all dry ingredients.
In a separate bowl, blend well all remaining ingredients; add all at once to dry mixture. Stir only until moistened; spoon into 12 muffin cups (lined with paper cups or greased and floured or sprayed with nonstick spray). Sprinkle tops with mixture of 2 tablespoons sugar and 1/2 teaspoon cinnamon.
Bake at 400\u00b0 for 20 minutes.
(Use toothpick test for doneness.) Remove from pans immediately.
