Stir-Fry Ginger Chicken - cooking recipe

Ingredients
    2 Tbsp. oil or margarine
    6 unbreaded chicken breast fillets, thawed
    2 c. broccoli spears
    1 1/2 c. snow peas
    1/2 c. sliced water chestnuts
    1 1/2 c. chicken broth
    2 Tbsp. cornstarch
    1/2 tsp. ground ginger
    1 tsp. garlic, minced
    1/4 c. soy sauce
Preparation
    In wok or skillet, fry chicken breast fillets in oil or margarine for 3 to 4 minutes on each side using medium-high heat. Add broccoli, snow peas and water chestnuts and cook 2 to 3 minutes.
    Mix remaining ingredients in a bowl until cornstarch is fully dissolved.
    Pour over chicken breast fillets and vegetables and bring to a boil.
    Let sit for 2 to 3 minutes.
    Serve with rice.
    Makes 6 to 8 servings.
