Ingredients

8 oz. whole wheat bread (weigh after crusts removed)
1 c. milk
2 Tbsp. melted butter
2 Tbsp. soft brown sugar
1/2 tsp. cinnamon
2 large beaten eggs
3 oz. raisins
grated rind of small orange
2 Tbsp. marmalade
2 oz. coconut (optional)
nutmeg
Preparation

Butter or grease a 1-quart baking dish.
Break bread into small pieces and pour milk over it.
Stir well.
Let milk and bread soak for 30 minutes.
Add melted butter, cinnamon, eggs, raisins, orange rind and marmalade.
Spread mixture in baking dish.
Combine coconut (if desired) with a little nutmeg and sprinkle over pudding.
Bake at 350\u00b0 for about 1 1/4 hours.
