Yassa (Lemon Chicken) - cooking recipe

Ingredients
    1/2 c. lemon juice
    3 large onions, sliced
    ground black pepper to taste
    1 to 2 red hot chile peppers, cut into small pieces (optional)
    5 Tbsp. vegetable oil
    1 (3 1/2 lb.) chicken, cut into serving pieces
    1/2 c. water
    3 c. cooked rice
Preparation
    In medium-size bowl, combine lemon juice, onions, chiles, 4 tablespoons oil and black pepper.
    Stir well to mix.
    Put chicken in marinade; let soak.
    Prepare rice according to package instructions to allow chicken time to marinate.
    When rice is complete, set aside.
    Put 1 tablespoon of oil in a skillet.
    Heat on low setting.
    Brown chicken on both sides; remove.
    Pour water in boiler, add browned chicken and remaining marinade.
    Cook for about 20 to 25 minutes.
    Add water, if necessary.
    Serve over rice.
    Relatively low-fat dish, depending on oil used, 24 g fat per serving.
    Serves 6.
