Chile Enchilada Sauce - cooking recipe
Ingredients

1 medium size onion, minced
2 Tbsp. salad oil
3 1/2 c. tomato puree
2 cloves garlic, minced or mashed
4 Tbsp. chili powder (hot) or 2 Tbsp. chili powder (medium)
1/2 tsp. ground cumin
1/4 tsp. dried oregano
1 tsp. salt
Preparation

Saute onion in salad oil until limp and yellow. Add tomato puree and garlic. Stir in chili powder gradually.
Add cumin, oregano and salt. Cover and simmer about 30 minutes.
Stir occasionally, then strain through medium fine mesh strainer. Makes about 3 cups.
