Jambalaya - cooking recipe

Ingredients
    2 lb. boneless chicken pieces
    salt, black pepper and paprika
    3 Tbsp. vegetable oil
    2 c. each chopped celery and green onions
    1 c. chopped green peppers
    1 c. uncooked rice
    2 c. boiling chicken
    1 tsp. salt
    1 clove garlic, minced
Preparation
    Season chicken with salt, pepper and paprika.
    Brown on all sides in large ovenproof skillet or Dutch oven.
    Remove chicken. Set aside.
    Pour off all but 2 tablespoons of dripping.
    Add celery, onions and green peppers to skillet.
    Cook until tender. Stir in rice, broth and seasonings.
    Return chicken to pan. Cover and bake at 375\u00b0 for 30 minutes or until chicken is tender. Fluff with fork.
    Serve with hot pepper sauce, if desired.
