Morning Glory Muffins - cooking recipe
Ingredients

2 c. flour
1 1/4 c. white sugar
2 tsp. baking soda
1/2 tsp. salt
2 c. grated carrots
1/2 c. raisins
1/2 c. nuts
1 apple, peeled, cored and grated
3 eggs
1 c. oil
2 tsp. vanilla
1/2 c. coconut
Preparation

In a large bowl, mix flour, sugar, baking soda and salt.
Stir in carrots, raisins, nuts, coconut and apple.
In separate bowl, beat eggs, oil and vanilla.
Stir into flour mixture until batter is combined.
Spoon into well-greased muffin cups.
Bake at 350\u00b0 for 15 to 20 minutes.
Makes 14 muffins.
