Golden Potato-Cheese Squares - cooking recipe
Ingredients

5 to 6 medium potatoes
2 Tbsp. margarine, cut into bits
1 c. low-fat milk
2 c. shredded Cheddar cheese
2 tsp. Dijon mustard
1 tsp. paprika
salt and pepper to taste
bread crumbs
Preparation

Cook the potatoes until tender.
Once they are done, preheat the oven to 350\u00b0.
Put the potatoes (at this point, peel the skins, if desired) in a larger mixing bowl with the margarine and a little of the milk.
Mash until smooth.
Add the remaining milk and the rest of the ingredients and mix thoroughly.
Pour the mixture into an oiled large shallow baking casserole and pat smooth. Top with bread crumbs.
Bake for 30 minutes.
Allow to stand for 5 to 10 minutes, then cut into squares and serve.
