Curried Sweet Potato Strips - cooking recipe

Ingredients
    3 small potatoes, peeled (about 1 1/2 lb.)
    1 Tbsp. plus 1 tsp. vegetable oil
    1 Tbsp. unsweetened apple juice
    vegetable cooking spray
    1/2 tsp. curry powder
Preparation
    Cut each potato lengthwise into 14 thin wedges.
    Place in a large heavy-duty zip top bag.
    Add oil, apple juice and curry powder to bag.
    Seal bag and shake until potato wedges are well coated.
    Remove potato wedges from bag and place in a single layer on a 15 x 10 x 1-inch jelly roll pan coated with cooking spray. Bake at 400\u00b0 for 45 minutes or until crisp and lightly browned, stirring every 10 minutes.
