Corn Muffins(Makes 6 To 12 Servings) - cooking recipe
Ingredients

2 c. buttermilk self-rising corn bread mix
1/2 c. self-rising flour
1 small onion
1 green bell pepper
2 Tbsp. vegetable oil
2 eggs
1 c. buttermilk
2 Tbsp. liquid butter
Preparation

In medium bowl, stir together corn bread mix and flour. Chop onion and pepper into small squares on a cutting board. Mix onion and pepper with vegetable oil and stir into flour. Break eggs in a small bowl and beat. Pour into dough and mix well. Add enough buttermilk to make a consistency similar to cake dough. Pour batter into muffin pan molds. Bake at 450\u00b0 for 15 to 20 minutes. Remove from oven. While hot, brush each top with liquid butter.
