Peach Butter - cooking recipe

Ingredients
    5 lb. peaches (about 14)
    1 c. water
    3 1/2 c. sugar
    2 Tbsp. orange liqueur or peach brandy (optional)
    1 Tbsp. candied ginger (optional)
Preparation
    Simmer the peaches in the water until the skin is easy to remove.
    Peel and pit the peaches, saving the cooking liquid. Puree the peaches (you will have about 8 cups) and place with the liquid (about 1/2 cup) and the sugar in a pot and cook over low heat, stirring occasionally until thick, about 3 hours.
    Taste and add optional liqueur or brandy and cook a few minutes more.
    Add the ginger, if desired.
    Remove from the heat and cool.
    Place in a container in the refrigerator and keep refrigerated or freeze until ready to
    use.
    Makes 4 pints.
