New Orleans Praline - cooking recipe

Ingredients
    1 1/2 c. white sugar
    3/4 c. brown sugar, packed
    1/4 c. plus 2 Tbsp. butter or margarine
    1/2 c. half and half
    2 c. pecan halves
Preparation
    Combine all ingredients in pan.
    Cook over low heat, stirring gently until dissolved.
    Cover and cook over medium heat 2 to 3 minutes to wash sugar crystals from side of pan. Cook to soft boil stage or 235\u00b0 on candy thermometer, stirring constantly.
    Remove from heat and beat with wooden spoon until mixture begins to thicken.
    Work quickly, dropping by tablespoon onto greased waxed paper.
    Let stand until firm.
    Makes 1 1/2 dozen.
