Parmesan Spinach Balls - cooking recipe
Ingredients

2 (10 oz.) pkg. frozen chopped spinach, cooked and well drained
1 1/3 c. seasoned bread crumbs
1/3 c. Parmesan, grated
1/4 c. finely chopped celery
1/4 c. finely chopped onion
1/2 tsp. hot pepper sauce
1/4 tsp. nutmeg
2 eggs, beaten
olive oil (for frying)
Preparation

In a large bowl, combine spinach, bread crumbs, Parmesan, celery, onion, hot pepper sauce, nutmeg and eggs.
Mix well. Shape spinach mixture into balls using 1 level tablespoonful of mixture for each ball.
In heavy 2-quart saucepan, heat 1 1/4-inches oil (approximately 3 cups) to 350\u00b0.
Deep fry balls in small batches 1 minute or until golden brown. Remove with slotted spoon. Drain on paper towels. Serve.
Yields 3 dozen.
