Crab Salad Dinner Waffles - cooking recipe
Ingredients

hot waffles
1 lb. crabmeat
6 scallions, thinly sliced
2 Tbsp. chives, snipped
1 1/2 Tbsp. lemon juice
2/3 c. mayonnaise
2 Tbsp. ketchup
salt and pepper
Tabasco to taste
2 medium tomatoes, finely diced and drained
Preparation

Put crabmeat in large salad bowl; using fork, toss with scallions, chives, lemon juice, mayonnaise and ketchup until blended.
Season with salt, pepper and Tabasco, can add more lemon. Cover with plastic wrap and set aside.
(Can make this part ahead and refrigerate for a few hours.)
Just before serving add tomatoes to crab mix.
Serve on top of hot waffles placed on a large lettuce leaf.
Can also be served alone.
