Ingredients

2 lb. ham hocks or salt pork (more or less)
6 bunches greens
1/2 to 1 c. chopped onion (optional)
salt and pepper to taste
1 tsp. sugar
1/4 c. vinegar
Preparation

Place meat in pot with water and boil for about 1 1/2 hours or until almost tender.
If very salty, pour off water after 1/2 hour of boiling and add fresh water.
