Shrimp Fried Rice - cooking recipe

Ingredients
    1 Tbsp. vegetable oil
    1 c. sliced fresh mushrooms
    1/3 c. sliced green onions (including tops)
    1 tsp. minced fresh ginger
    1 egg, beaten
    2 c. cooked rice, chilled
    1 1/2 c. cooked shrimp, cut in small pieces
    1 Tbsp. soy sauce
Preparation
    In a large skillet or wok, heat oil over medium-high heat.
    Add mushrooms, onion and ginger; stir-fry for 1 minute.
    Push vegetables aside.
    Pour egg into skillet and scramble.
    Stir in rice and gently, separate grains.
    Add shrimp and soy sauce; stir until thoroughly heated.
