The Roundman'S Fabulous Baked Zita - cooking recipe

Ingredients
    1 jar prepared spaghetti sauce
    1 qt. Ricotta cheese
    2 (1 lb.) pkg. Mozzarella cheese, which has been grated
    2 pkg. frozen chopped spinach (get the cheapie store brand), defrosted and drained
    2 eggs, slightly beaten
    1 quick turn of the pepper mill added to each layer or to taste
    1 bunch fresh basil
    zita pasta
Preparation
    Cook the pasta to al dente (slightly undercooked).
    In a separate bowl, mix together the Ricotta cheese, about three quarters of the grated Mozzarella cheese, the beaten eggs and the spinach.
    Don't overmix, just slightly blend the ingredients. Empty the zita into a colander and drain.
    Do not flush with cold water, as you will be using the hot pasta immediately.
