Pineapple Meringue Pie - cooking recipe

1 c. sugar
4 Tbsp. cornstarch
1/2 c. hot water
1 c. pineapple juice
3 egg yolks, slightly beaten
3 Tbsp. butter
1 Tbsp. lemon juice
1 1/3 tsp. lemon rind
1 1/4 c. crushed pineapple, well drained
Preparation

In saucepan, combine sugar and cornstarch.
Gradually stir in water and pineapple juice.
Add egg yolks.
Blend in butter, lemon juice and rind.
Add crushed pineapple.
Cook over medium heat, stirring constantly.
Boil 1 minute.
Remove from heat and stir until smooth.
Pour into baked pie shell.
Cover with meringue.
