Freezer Cucumber Chips - cooking recipe

Ingredients
    4 c. thinly sliced cukes (3 medium)
    2 c. thinly sliced onions
    1 Tbsp. salt
    1 c. water
    1 small hot chili pepper, sliced (optional)
    1 c. sugar
    1/2 c. vinegar
Preparation
    Combine the first 4 items.
    Let stand 2 hours.
    Drain and squeeze veggies to extract moisture.
    Add chili pepper, sugar and vinegar.
    Stir to dissolve sugar.
    Spoon into freezer containers; cover tightly and freeze at least overnight.
    Thaw 4 hours before serving, then store in refrigerator.
    Makes 3 pints.
