California Rice Casserole - cooking recipe

Ingredients
    1/4 c. margarine
    1 c. chopped onion
    4 c. cooked rice
    2 c. sour cream
    1 c. low-fat cottage cheese
    1 large bay leaf, crumbled
    1/2 tsp. salt
    1 or 2 (4 oz.) cans green chilies, drained and chopped
    2 c. grated cheese
    chopped parsley
Preparation
    Saute onion in margarine.
    In large bowl, mix well hot rice, sour cream, cottage cheese, bay leaf and salt.
    Spray 2-quart baking dish with cooking spray.
    Layer half rice mix in bottom of baking dish, then half of chilies, half of cheese; repeat layer. Bake, uncovered, at 375\u00b0 for approximately 25 minutes.
    Sprinkle with chopped parsley.
