Ingredients

1 pkg. coconut bar cookies
2 boxes lemon pudding
2 or 3 egg whites
Preparation

Line cookies on bottom and sides of a 13 x 9-inch pan.
Mix the pudding according to package directions, then pour over the cookies in the pan.
Whip up the egg whites until stiff and fluffy.
Pour over the filling and bake 5 to 7 minutes until meringue is nice and golden.
Or you can use whipped cream when pudding cools.
