Eggplant Casserole - cooking recipe

Ingredients
    2 medium eggplant
    3 medium onions
    3 eggs
    1 stick margarine
    10 saltine crackers
    1 c. milk
    1 1/2 Tbsp. baking powder
    1 1/2 c. shredded cheese
Preparation
    Peel and chop eggplant and onions.
    Boil until tender; drain. Mix until blended the eggs, margarine, milk and crushed saltines. Add eggplant and onions.
    Salt and pepper to taste.
    Beat in 1 1/2 tablespoons of baking powder; cover with cheese.
    Bake in a 3-quart baking dish in a 350\u00b0 oven until brown, about 30 minutes.
