Chicken Salad In Cantaloupe Halves - cooking recipe

2 medium cantaloupes, chilled
2 c. diced chicken
1/2 c. each: thinly sliced celery and slivered almonds
1 can mandarin orange sections, drained
1/4 c. each: mayonnaise and sour cream
1/2 tsp. grated lemon peel
2 Tbsp. lemon juice
1 tsp. ginger to taste
1/2 tsp. sugar
1/4 tsp. salt
parsley or mint (garnish)
seedless green grapes (a good addition)
Preparation

Cut cantaloupes in half; discard seeds and scoop out flesh with melon baller, leaving 1/2-inch thick shells.
Smooth ragged edges with spoon.
Combine the melon balls, diced chicken, celery, almonds, orange sections and grapes.
Chill.
