Rye Bread - cooking recipe

Ingredients
    2 pkg. yeast
    2 c. warm water
    2 c. scalded milk
    2 Tbsp. salt
    1 Tbsp. anise seed (optional)
    4 Tbsp. vegetable oil
    6 Tbsp. dark molasses
    4 c. unsifted rye flour
    8 to 10 c. sifted white flour
Preparation
    Add yeast to warm water.
    Let stand for a few minutes.
    Stir to dissolve.
    In mixing bowl, combine milk, salt, anise and molasses.
    Cool to lukewarm.
    Add rye flour.
    Beat until smooth. Stir in yeast mixture.
    Slowly blend in remaining flour until dough leaves sides of bowl.
    Turn dough onto floured surface. Knead 5 to 10 minutes or until smooth and elastic and does not stick when pinched with fingers.
    Cover with waxed paper, then a towel.
    Let rest 20 minutes.
