Hot Tamales - cooking recipe

Ingredients
    2 lb. ground beef
    2 onions, diced
    salt
    chili powder
    4 c. cornmeal
    hot water
    lard
    1/2 clove garlic, chopped
    red pepper
    1 can tomato paste
    6 Tbsp. fat
    4 to 5 doz. shucks
Preparation
    Cook beef in small amount of lard for 10 to 15 minutes; add onions and garlic continuing to cook.
    Season to taste with salt, red pepper and chili powder; add tomato paste.
    Cook until all ingredients are done.
    Let meat set for a few minutes; remove fat from top.
    Make a mush by pouring boiling water over cornmeal; season to taste.
    Spread mush over shucks.
    Place thick line of meat in center of mush and roll up.
    Place in large cooker or Dutch oven.
    Pour in 3 cups boiling water.
    Cover and cook slowly for 3 hours.
